We’re looking forward to serving you tonight at our weekly wine pairing and pouring from 5-8 p.m. To continue to observe the Lenten season, we will be preparing Mediterranean-style Eggplant Pasta. Tomato sauce loaded with eggplant and basil is tossed with pasta and topped with mozzarella cheese. It is incredibly flavorful and a satisfying option. You will enjoy the harmonious flavors and textures of the meaty eggplant and juicy tomatoes, accompanied by garlic and onion and fresh basil. Even true meat lovers will find this recipe more than satisfying with all the comforting Italian flavors in one dish.
Our wines for the evening include Nama Byzantino Sweet Red Wine, Skouras Assyrtiko Wine, and Tribute Cabernet Sauvignon. Nama Byzantino is a unique and highly sought-after red wine that is used for communion by the Greek Orthodox clergy. The wine is made from the finest Muscat Tyrnavos grapes, known for their characteristic sweetness and fruity flavor. What sets Nama Byzantino apart is its light garnet color, light body, and compete lack of oak aging. The Assyrtiko grape can be very similar to Sauvignon Blanc, with its citrus flavors, especially lemon, and high acidity. Assyrtiko is a white Greek wine grape indigenous to the island of Santorini. Tribute Cabernet Sauvignon is a bold wine with flavors of blackberry, black cherry, and ripe plum. Well-integrated tannins build to a long, velvety finish. It is aged 13 months on toasted French and American oak.
